Mediterranean Barley & Chickpea Salad 20 mins 30 mins Ingredients 1 cup Farm Boy" Pearl Barley 3 cups Farm Boy"" Chicken or Vegetable Broth 1 tsp salt 1 can Farm Boy'* Organic Chickpeas, drained and rinsed 1 1/4 cups halved grape tomatoes 1 1/4 cups diced Lebanese cucumbers (about 3) 1 1/4 cups diced orange or red bell pepper 3/4 cup minced red onion 1/2 cup chopped flat leaf parsley 1/4 cup chopped dill DIFFICULTY: are © 8 E ET UE Directions 1 Place broth in medium saucepan and bring to a boil. Add pearl barley and salt and reduce the heat to medium low. n Simmer, covered, until barley is tender and most of the liquid has been absorbed, 25-30 minutes. Barley will have a chewy texture and there may be some liquid Left. uw Drain and spread barley on sheet pan to cool grains completely. 4 In Large bowl, combine cooled barley, chickpeas, tomatoes, cucumbers, bell pepper, red onion, parsley, dill, olives and feta cheese. un Add dressing to taste and toss gently but thoroughly.
