Place chicken breast in a pot and fill with water, just enough to cover the chicken. Season with sait and pepper. Bring to boil then simmer on low until chicken is cooked through. Shred using two forks. Set aside to completely cool. 2. in a bowl, add the cooled chicken, mayonnaise, chopped green pepper and season with ground black pepper (and salt if needed).
